The Complete Stories - Franz Kafka

As the title states, this is pretty much all the short stories and novellas that Kafka wrote, including unfinished ones. It doesn't include stories that became part of one of his novels. If you want to familiarize yourself with his work or want to add to add some to your library, this is the book you want, assuming you're looking for an English translation. This one's a keeper for me.
